2007 Cabernet Franc
2007 Cabernet Franc

Our winemaking consultant, Dimitri Tchelistcheff, believes that with only modest blending, Cabernet Franc itself is one of the best wine that he produces.  Coupled with William Jarvis' preference for this wine, our 2007 Cabernet Franc is highly sought after. With a blend of 83% Cabernet Franc and 17% Cabernet Sauvignon, herb and spice aromas with soft plum undertones lead you to fresh fruit flavors of blackberry and blueberry. This vintage of Cabernet Franc spent 26 months aging in new French Nevers oak barrels, providing a hint of toasty oak and vanilla to the berry and floral aromas of this wine.

92 Points. Wine Enthusiast. Cabernet Franc is a difficult variety on its own, but Jarvis does an excellent job. This is still quite tannic, with a hard, astringent mouth feel to the cherry, blackberry and dark-chocolate flavors. Give this a few more years of aging, although it doesn’t seem like a long term ager.

90 Points. Gold Medal. Beverage Testing Institute. Deep garnet purple color. Dense aromas of raisins, crème brulee, cocoa, and beeswax candle with a supple, dry-yet-fruity medium-to-full body and a rich, chewy, cigar tobacco and salted nut finish. Delicious and fine-tuned for the table.
