Our estate grown, 100% Cabernet Sauvignon is our flagship wine. With a minimum of 24 months in 100% new French oak barrels, it is released only after nearly five years of aging in our perfect cave conditions. A wine of superior balance, you can taste the care that this wine has received, making it ready to enjoy upon release.
The Estate Chardonnay is fermented and aged sur-lie in 100% new French oak barrels that are stirred twice weekly to create our Jarvis Estate signature style, featuring subtle nuances of toasty vanilla with honeysuckle aromas and a long, soft finish.
Cabernet Franc has long been the favorite grape varietal of William Jarvis. He believes that it grows exceptionally well in the Napa Valley and is particularly suited to the Jarvis cool climate vineyards. This versatile grape is used as a blending element of our flagship Lake William Blend and the principle ingredient of the Science Project wine. It is bottled also as a varietal wine. The Jarvis Cabernet Franc is barrel aged a minimum of 19 months in 100% new French oak and bottled unfined and unfiltered.
Merlot is a varietal that does very well on the gentle, sloping vineyards of Jarvis Estate, producing a highly anticipated wine. Our 100% Merlot is so desired, it is often our first wine to sell out each vintage. Aged a minimum of 18 months in new French oak barrels and then cave-aged to perfection, the wine is ready to enjoy upon release.
Petit Verdot is a finicky little grape packed with a lot of power. It is usually the last to ripen during harvest. As a specialty wine it is developing quite a following. Petit Verdot contributes a beautiful deep color and black fruit flavor to our Lake William blend. Also, a small amount of the crop is bottled 100% varietal. This provides you a unique tasting experience of a varietal not commonly seen unblended.
Dimitri Tchelistcheff, our long-time consultant, had a special feeling for Tempranillo and suggested planting one acre, making this a very limited production wine. The name Tempranillo comes form the Spanish, "temprano" which means "early", and Tempranillo true to its name is always our first red grape to ripen. Aging for a minimum of 12 months in 100% French oak helps to make this an especially food friendly wine.
