Winemaker Dimitri Tchelistcheff's New Research 1996-05-01
Dimitri is currently involved in a Research Project with Dr. Robert K. Mortimer and Dr. Bernard Prior. Dr. Mortimer is from the Department of Molecular and Cell Biology at the University of California at Berkeley. Dr. Prior is from South Africa. Their research is on the topic of spontaneous fermentation of Cabernet Sauvignon. They will be identifying the different yeasts that exist naturally in JARVIS' vineyards, and Dimitri will be fermenting a tank of Cabernet Sauvignon using only it's natural yeast.
