Reserve Cabernet Sauvignon
Dimitri Tchelistcheff, our long time consultant, feels that the designation of “Reserve” should only be given to wines that are truly special.  Only two out of our last five vintages had Reserve wine!  Winemaker Scott Morrison considers each vintage of Jarvis Cabernet Sauvignon to see which are those near perfect wines to be labelled Reserve.

Reserve Merlot
The Jarvis Estate Reserve Merlot is an extremely rare offering. This extremely small production wine is highly sought after. Sourced from one very small part of our Merlot vineyard that consistently produces exceptional grapes, we set aside these grapes in an exceptional growing year to create a very special reserve wine.

Lake William
In 1993, one dark night during fermentation pumpovers William Jarvis accidentally pumped a third of a tank of Cabernet Franc into a tank of Cabernet Sauvignon. Both he and our winemaker consultant Dimitri Tchelistcheff were distraught until the fermentation was complete and Dimitri declared the wine “not that bad”. The accidental blend, something akin to a Bordeaux Blend was an immediate hit with the winery guests and since 1996, Lake William has been made yearly with that same blend of red grapes always coming from the vineyards cooled by the breezes off Lake William.

Will Jarvis' Science Project
It's exciting to imagine that a young boy's science project could become a world class wine, but that's exactly what happened!  Will Jarvis, the son of William and Leticia, made wine for his 8th grade science project.  When sampled a decade later, the result was exceptional and inspired the 2007 debut vintage of this wine.  It is made from a top Cabernet Franc lot plus a small, typically 5%, blend of Merlot and always in small half size barrels so as to approximate the original Science Project.

Finch Hollow Chardonnay Unfiltered
This is our top Chardonnay and is made using grapes from the Finch Hollow Vineyard. Our winemaker distinguishes this special selection of Chardonnay by using only the top-half of the barrels of Finch Hollow Chardonnay and bottling the wine unfined and unfiltered. By doing so, we retain the most delicate nuances of the Chardonnay's varietal character.

Finch Hollow Chardonnay
This unique Chardonnay features grapes from a special plot in our vineyard called Finch Hollow, which is characterized by particularly shallow soil with exceptional drainage. It was this portion of our vineyards most frequented by Finch Hollow's birds before we started netting all vineyards. The distinct terroir of this site offers intense tropical fruit notes in the grapes and we began bottling this section of the vineyard separately beginning with the 2000 vintage.

Cabernet Sauvignon
Our estate grown, 100% Cabernet Sauvignon is our flagship wine. With a minimum of 24 months in 100% new French oak barrels, it is released only after nearly five years of aging in our perfect cave conditions. A wine of superior balance, you can taste the care that this wine has received, making it ready to enjoy upon release.

Petit Verdot
Petit Verdot is a finicky little grape packed with a lot of power. It is usually the last to ripen during harvest. As a specialty wine it is developing quite a following. Petit Verdot contributes a beautiful deep color and black fruit flavor to our Lake William blend. Also, a small amount of the crop is bottled 100% varietal. This provides you a unique tasting experience of a varietal not commonly seen unblended.

Merlot
Merlot is a varietal that does very well on the gentle, sloping vineyards of Jarvis Estate, producing a highly anticipated wine. Our 100% Merlot is so desired, it is often our first wine to sell out each vintage. Aged a minimum of 18 months in new French oak barrels and then cave-aged to perfection, the wine is ready to enjoy upon release.
